Easter Brunch Lemon Loaf

How is Easter just around the corner already? I feel like I just finished picking up all the Christmas decor! Anyone else? But with most of us stuck in our homes this Easter I decided to play around with some fun Spring recipes! I came across this VEGAN lemon loaf on Pinterest and it had so many amazing reviews I thought I would try it out! So if anyone in your family has dairy sensitive this one is for you! Or even if you donโ€™t have dairy issues in your family you can substitute the dairy free ingredients for regular ones and it would be amazing also!

INGREDIENTS:

2 cups flour
1 1/2 tsp. baking powder
3/4 tsp. salt
1/4 tsp. baking soda
1 cup sugar
3/4 cup milk (I used Lactaid Fat Free Milk)
1/2 cup plain yogurt (I used SO Delicious Dairy Free Vanilla Yogurt)
1/4 cup cup oil
1/4 cup lemon juice
1 lemon zest
1 tsp. vanilla extract

Preheat the oven to 350 degrees Farenheit. Mix together the dry ingredients in one bowl and whisk the wet ingredients in a separate bowl. Then combine wet ingredients to dry ingredients. Then pour the mixture into a greased 9x5 loaf pan.

Put in the oven for 50-55 minutes until you stick a toothpick in and in comes out clean. Mine was in for about 53 minutes. Then take out of the oven and let it cool. Mix together a tbsp. powdered sugar and milk for frosting and frost the loaf once it is cooled, or leave the loaf unfrosted. And enjoy!
