Easter Brunch Lemon Loaf
How is Easter just around the corner already? I feel like I just finished picking up all the Christmas decor! Anyone else? But with most of us stuck in our homes this Easter I decided to play around with some fun Spring recipes! I came across this VEGAN lemon loaf on Pinterest and it had so many amazing reviews I thought I would try it out! So if anyone in your family has dairy sensitive this one is for you! Or even if you donโt have dairy issues in your family you can substitute the dairy free ingredients for regular ones and it would be amazing also!
INGREDIENTS:
2 cups flour
1 1/2 tsp. baking powder
3/4 tsp. salt
1/4 tsp. baking soda
1 cup sugar
3/4 cup milk (I used Lactaid Fat Free Milk)
1/2 cup plain yogurt (I used SO Delicious Dairy Free Vanilla Yogurt)
1/4 cup cup oil
1/4 cup lemon juice
1 lemon zest
1 tsp. vanilla extract
Preheat the oven to 350 degrees Farenheit. Mix together the dry ingredients in one bowl and whisk the wet ingredients in a separate bowl. Then combine wet ingredients to dry ingredients. Then pour the mixture into a greased 9x5 loaf pan.
Put in the oven for 50-55 minutes until you stick a toothpick in and in comes out clean. Mine was in for about 53 minutes. Then take out of the oven and let it cool. Mix together a tbsp. powdered sugar and milk for frosting and frost the loaf once it is cooled, or leave the loaf unfrosted. And enjoy!
