Dairy Free Pumpkin Bread
It is officially pumpkin season! The fall season is my favorite time to bake and be in the kitchen. As I was searching the internet for pumpkin bread recipes I noticed that a majority of them were dairy free. No butter, no, no milk, nothing! I was super excited about this because my husband and I both have been trying to eat less dairy. I ended up using one from Better Homes and Gardens and it was so good! It made two loaves so I could give one to my parents and everyone loved it! Make sure you try out the recipe and let me know how it goes!
3 cups sugar
1 cup cooking oil (I used vegetable oil)
4 eggs
3 1/2 cups all-purpose flour
2 teaspoons baking soda
1 1/2 teaspoons salt
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
2/3 cups water
1 15oz. can of pumpkin
I used two 9x5x3 bread pans and sprayed them with non-stick cooking spray before baking. Bake at 350 degrees for 55-65 minutes until the bread is cooked all the way through. Enjoy!
